The goal | The goals of the course are to introduce students to the basic and advanced knowledge of oils and fats technology. | |||
The outcome | Students will gain knowledge, theoretical and practical, of basic and advanced principles of oils and fats technology, necessary for future work in oils and fats industry. | |||

Contents of lectures | The importance of oils and fats. Classification of oils and fats. Composition and characteristics of individual fats and oils. Storage and quality evaluation of oil and raw materials. Drying and cleaning of seeds. Pretreatment of seeds. Seeds pressing. Extraction of oil. Oil cake. Oil refining. Oil storage. Hydrogenation of oils. Manufacture of vegetable fat and margarine. Production of fatty acids, glycerol and soap. Production of biodiesel. | |||
Contents of exercises | Quality testing of raw materials. Laboratory crude oil extraction. Laboratory neutralization. Laboratory bleaching. Determination of physico-chemical characteristics of oils and fats. Evaluation of the oxidative stability of oils and fats. | |||
